Dinner last night: Healthy(ish) Nachos
Needed:
1/2 Fryer Chicken
Onion
Salsa
Corn
Black Beans
2% Shredded Mexican Blend Cheese
Cilantro
Baked Tortilla Chips
Low-Fat Sour Cream
How To:
Boil the chicken until cooked through (~15-20 min), then peel off the skin and shred the chicken from the bone.  (note: if you don’t really feel like going through this extra work, shredded or cubed skinless/boneless chicken breast would work just fine)
Combine shredded chicken with diced onion and salsa of your choice, and set aside to marinate a bit while you prep everything else
Preheat oven to 350°F
Rinse and drain the black beans and corn
Cover a baking sheet with some tin foil (makes for MUCH easier cleanup) and place a layer of tortilla ships across the bottom
Top the chips with some (or more!) cheese, corn, and black beans.  Layer with the shredded chicken mixture and cilantro
Bake for  ~10-15 minutes until chicken is warmed through and cheese is melted
Serve with salsa, sour cream, and any additional toppings of your choice!
